We believe in letting the natural flavours of New Zealand produce shine, using techniques that enhance rather than mask. Seasonal menus reflect the best available produce, and our approach favours minimal intervention so the integrity of each ingredient remains intact. A carrot should taste vividly of carrot, a snapper of the sea it came from.

Dishes are crafted with the attention of a dealer shuffling cards, yet playful elements surprise and delight diners. The result is food that is exact but never stiff, considered but never cold.

We are committed to sustainable practices, sourcing locally and reducing waste wherever possible. We build close relationships with New Zealand growers and suppliers, and the kitchen uses whole-animal and root-to-stem cooking. Our pastry chef crafts desserts that are both beautiful and delicious, adding a sweet finish to your meal. Specialising in seasonal fruit desserts, the pastry chef also incorporates subtle casino-themed elements in plating, turning the final course into a playful, elegant display.

How the Collection Is Built

The kitchen pairs established craft with careful experimentation, treating every technique as a tool for flavour rather than display.

Modern and Traditional

We blend modern techniques like sous-vide with traditional methods such as wood-fire grilling to create depth of flavour. Sous-vide gives precise temperature control for proteins, while the wood-fire grill adds smoky, charred notes. The two approaches work together, not against each other.

Fermentation and Preservation

Our kitchen experiments with fermentation and preservation to add complexity and reduce waste. House-made pickles and ferments appear throughout the menu, and preserved ingredients are used in dishes where their sharpness can lift richer elements. It is patience turned into flavour.

Plating as Art

Each plate is composed like a specimen display, with attention to colour, texture, and negative space. Inspiration comes directly from the Culinary Specimen Cabinet, and the team uses tweezers and precise placement to build plates that feel considered but never overwrought.
